Savory Egg Toast/Masala Egg Toast

Bread Toast is one of the simplest breakfast/snack item that can made in minutes. The first thing that comes to my mind when it comes to bread with eggs is bread omelette.Bread omelette is a very simple dish which as the name implies involves cooking bread along with the omlette. Bread omelette is a very popular street food in South India. It is also one of the must have street foods in Chennai. No star hotel can beat the taste of bread omelettes you get in small local shops across the streets of Chennai. Savory egg Toast/Masala egg toast is almost similar to bread omelette except for the batter. It is made by toasting bread slices dipped in a batter comprising eggs and besan/garbanzo bean flour. Besan flour serves as a binding agent in this recipe. Normally onions and other veggies wouldn’t stick to the bread slices when soaked in egg mixture as beaten eggs tend to be runny. Adding besan flour not only makes the batter bind-able but also adds flavour to the toast. Plus it is healthy as it is full of proteins and also has fewer calories than that of wheat.

Savory Egg Toast

The same toast can be made in 3 ways.

Without the egg yolks – Just egg whites & besan flour.

Without eggs – Just besan flour & milk (Toasts made using besan flour and milk taste as good as an egg toast that you wouldn’t regret skipping the eggs)

Eggs(With yolks) and Besan Flour

Required Ingredients:

  • Eggs-2
  • Milk-1/4 cup
  • Besan/chickpeas/garbanzo bean flour-2 1/2 tbsp
  • Onion-1/2
  • Coriander Leaves-1 tbsp(finely chopped)
  • Mint leaves-1 tbsp(finely chopped)
  • Chilli flakes/pepper-1 tbsp
  • Salt-As required
  • Bread Slices-4
  • Butter-To toast

Method:

Cut the bread slices diagonally into triangles.

In a mixing bowl, add eggs,milk and salt and beat well.

Once the eggs turn frothy, add besan flour and mix into a smooth batter without lumps.

Now, add chopped onions, coriander leaves , mint leaves and chilli flakes and mix well.

The batter should have medium consistency i.e it should neither be runny nor too thick.

Add more milk if it becomes thick and add more besan if it is vice versa.

Heat a non-stick tawa or a normal dosa kal(dosa griddle) and grease it with little butter.

Soak the bread slices in the batter and toast on the tawa until both sides is cooked.

Serve hot with tomato ketchup or as is.

Notes:

  • Freshly ground Black Pepper may be used instead of chilli flakes.
  • You can avoid adding chilli flakes to the batter and sprinkle some on the toast later.
  • You can add corn kernels and grated carrots to the batter.
