Mutton/Lamb Masala

Spicy mutton masala/gravy

I stopped eating mutton 15 years back. It happened when my dad took me to a mutton stall. I couldn’t stand the smell of raw meat and the sight of meat soiled in blood made me nauseate. Thereafter, I decided not to go with him to any meat stall as i wasn’t willing to give up eating chicken as well 😉

My sister loves mutton and i decided to cook mutton for her. My very first mutton masala was a huge hit with everyone at home. My parents showered me with appreciations for cooking it to perfection. This is a very simple and easy to make recipe. It doesn’t require any prior experience in cooking red meat. So, go ahead and try this recipe. Serve it as a starter or as a side for rotis, chapathis and rice.


Required Ingredients:

For Marination:

  • Mutton/lamb -300 gms
  • Onion paste-2 tbsp
  • Ginger Garlic paste-2 tsp
  • Turmeric powder-1 1/2 tsp
  • Red chilli powder-1 tsp
  • Black pepper powder-1 tsp
  • Salt-As required
  • Lemon juice-2 tsp

For Gravy:

  • Onion-2 large
  • Ginger garlic paste-2 tsp
  • Curry leaves-15 to 20
  • Turmeric powder-1 tsp
  • Red chilli powder-1 tsp
  • Coriander seed powder-1 1/2 tsp
  • Black pepper powder-2 tbsp
  • Coconut oil -As required
  • Salt- As required
  • Cloves-2
  • Green cardamom-1
  • Cinnamon stick-1
  • Fennel seeds-1 tsp
  • Hot Water- 3/4 cup



Clean and wash the mutton pieces in tap water

In a bowl add the mutton pieces, turmeric powder, red chilli powder, onion paste, ginger garlic paste, pepper powder, lemon juice and marinate.Leave it aside for 30-40 minutes

Add hot water to the marinated mutton and cook for 20-30 minutes in a pressure cooker.

Allow the pressure to settle and then open the cooker

Heat 4 tbsp of coconut oil in a kadai/wok and add cinammon sticks, cloves, green cardamoms, fennel seeds and allow them to flutter.


Add chopped oinions, green chillies, curry leaves, ginger garlic paste and saute until the onions turn golden brown


Now, add turmeric powder, red chilli powder, coriander seed powder, black pepper powder, salt and saute.Add the mutton pieces and saute until the mutton pieces are uniformly coated with spices.


Add little water , cover and cook for 15 minutes.


Switch off the flame once the gravy thickens a bit. (You can cook for more than 15 minutes on low flame without covering if you want it dry).

Garnish it with curry leaves fried in coconut oil.

  • You can use any vegetable/sunflower oil instead of coconut oil.
  • Add black pepper powder as per your spice tolerance
