Fruit and Nut bread in pressure cooker

Yet another yummy bread in pressure cooker!

In my last blog post (multi grain bread) i had mentioned about the pros and cons of baking bread using yeast. After a brief research in the net , i decided that i finally get my hands on baking bread in the conventional way i.e using yeast. Its important you test the yeast for its effectiveness every time before using it for any recipe.
There are two types of yeast available in the market. One is dry active yeast and the other is instant yeast. Instant yeast as the name implies can be added directly along with other ingredients while making the bread dough. Active Dry Yeast is the original all-natural yeast that has been used by generations of bread bakers. 

Yeast is a living microscopic organism which converts sugar or starch into alcohol and carbon dioxide. Hence its necessary to maintain optimum temperature and other conditions for the yeast to show its activity.In order to check whether your active dry yeast still is active, follow the below mentioned steps.

  1. Dissolve Active dry yeast in warm water (shouldn’t be hot or cold) and add a pinch of sugar to it.
  2. Stir well and leave it in a warm place for 10 minutes.
  3. If your yeast is good, it will start bubbling up after 10 minutes.
Required Ingredients:
  1. Whole wheat flour- 1 1/2 cups (200 gms)
  2. All purpose flour/maida- 1/2 cup (100 gms)
  3. Salt-1/2 tsp
  4. Active dry yeast-1 tbsp
  5. Corn flour-1 tsp
  6. Powdered Sugar-6 tbsp
  7. Vegetable oil/unsalted butter-3 tsp
  8. Water-1/4 cup
  9. Tutti fruttie- 1/4 cup
  10. Cashew nuts-10 to 15
  11. Almonds-10 to 15
  • Dissolve yeast in 1/4 cup water and add a pinch of sugar.
  • Stir well and leave it aside in a warm place for 10 minutes.
  • Sieve whole wheat flour, maida, salt, corn flour,Powdered sugar together and mix well.
  • Add water little by little and knead it into a smooth dough.
  • Add oil and knead into a dough which is barely sticky (add water/oil if dry or add flour if sticky).
  • Cover it with a kitchen towel and leave it in a warm place for 2-2 1/2 hours.
  • Once the dough has risen, punch it and knead it lightly.
  • Grease a loaf pan or any rectangular cake tray/tin .
  • Shape the dough to a loaf and cover it with a kitchen towel for 35- 45 minutes and let it rise further.
  • Preheat a pressure cooker with 2 cups of water .
  • Place a bowl filled with water into the pressure cooker.
  • Place a plate over the bowl and place the loaf pan over it.
  • Bake the bread on high flame for 20 minutes.
  • Check after 20 minutes with the help of a tooth pick.
  • If the tooth pick comes out sticky bake the bread on low to medium flame for 15-20 minutes.
  • Let it cool for a while and then slice.
  • Apply butter (optional) and serve.
  • Check whether your yeast is good before adding it.
  • You can add cherries, orange peels and any nut of your choice.
